Hokkigai (Surf Clam) Rice

Our surf clams are pre-processed, so we do not recommend cooking them directly with the rice. Instead, this dish is served as a "mixed rice" style (Takikomi Gohan). It’s incredibly delicious—give it a try!

Hokkigai (Surf Clam) Rice

Ingredients:

  • 4 bowls of cooked rice (or 4 cups of raw rice)
  • 4 pieces of surf clam (Hokkigai)
  • 3 tbsp Soy sauce
  • 3 tbsp Sake
  • 3 tbsp Mirin
  • Salt (to taste)

Hokkigai (Surf Clam) Rice

Instructions:

  1. Wash the rice 30 minutes in advance and drain well.
  2. Thaw the cleaned surf clams and slice them into thin, bite-sized strips.
  3. Mix the soy sauce, sake, and mirin in a pot and bring to a boil. Briefly add the clams, let it come to a boil once more, then immediately turn off the heat and remove the clams.
  4. Add the cooled cooking liquid to the rice from Step 1. Add the appropriate amount of water as indicated on your rice cooker and start cooking.
  5. Once the rice is cooked, fold the prepared surf clams into the hot rice.
  6. Serve and enjoy the full, savory flavor of the surf clams!
