Spicy & Refreshing Arctic Surf Clam Salad

Arctic Surf Clams (Hokkigai) are renowned for their delicate sweetness in fine Sashimi dishes. But when paired with aromatic tropical herbs and a bold, zesty Vietnamese dressing, they transform into an extraordinarily crisp, refreshing, and flavorful Surf Clam Salad! 

INGREDIENTS

1. Seafood & Fresh Produce

Arctic Surf Clam

  • Nissi Premium Arctic Surf Clams: 200g – 300g
  • White onion: 1/2 medium onion (thinly sliced)
  • Thai basil: 1 small handfull (coarsely chopped)
  • Thorny coriander / Culantro: A few leaves (thinly sliced)
  • Fresh cilantro: 1 small handful (chilled & chopped)
  • Wasabi microgreens: Optional (adds a subtle, peppery bite and extra crunch)

2. Signature Dressing

  • Sugar: 2 tbsp
  • Premium fish sauce: 2 tbsp
  • Vietnamese chili sauce (or Sriracha): 2 tbsp
  • Fresh lemon or lime juice: 2 – 3 tbsp
  • Thai bird's eye chili: 1 – 2 (finely minced, adjust to taste)
  • Sesame oil: 1/2 tsp (for a subtle aroma and glossy finish)

INSTRUCTIONS

Step 1: Prep the Surf Clams
Thaw the Nissi Surf Clams gently in the refrigerator or under cold running water.

Slice each clam horizontally in half and gently clean off any inner residue.

Chef's Tip for Extra Crispness: Flash-blanch the clams in boiling water for just 10 seconds, then immediately submerge them into an ice bath. This seals in their natural sweetness and locks in a delightful firm, crunchy texture.

Step 2: Prep the Fresh Herbs & Vegetables
Soak the thinly sliced white onion in ice water with a splash of lemon juice or vinegar for 10 minutes to reduce harsh bite and maintain crispness. Drain well.

Rinse all fresh herbs (Thai basil, culantro, cilantro, and microgreens) and gently pat dry before chopping.

Step 3: Craft the Dressing
In a small saucepan or bowl, combine the sugar, fish sauce, and chili sauce. Stir well (or heat gently) until the sugar dissolves completely. Allow the mixture to cool down completely.

Once cooled, whisk in the fresh lime juice, minced Thai chilies, and top off with a drizzle of sesame oil.

Step 4: Toss & Serve
In a large mixing bowl, combine the prepared surf clams, drained white onions, and chopped fresh herbs.

Pour the dressing over the ingredients. Toss gently using gloved hands or tongs to coat everything evenly without bruising the herbs.

Transfer to a serving platter, garnish with wasabi microgreens (or toasted sesame seeds/crispy shallots if desired), and serve immediately!
