Salmon Tartare & Ebiko

Salmon Tartare & Ebiko is a refreshing appetizer that combines diced raw salmon with Ebiko (capelin roe or small shrimp roe).

Ingredients

  • 200g sashimi-grade salmon
  • 30g Ebiko (capelin roe)
  • 1/4 red onion, finely minced
  • 1/2 avocado, diced
  • 1 tsp toasted sesame seeds
  • 1 tbsp Japanese soy sauce
  • 1 tsp sesame oil
  • 1 tsp lemon juice
  • 1/2 tsp sugar
  • Black pepper

Instructions

  1. Prep: Dice the salmon into small cubes. Dice the avocado and finely mince the red onion.
  2. Make the dressing: Mix the soy sauce, sesame oil, lemon juice, sugar, and a pinch of black pepper together.
  3. Mix the tartare: Place the salmon and red onion in a bowl, drizzle with the dressing, and toss gently. Add the diced avocado last and fold gently to keep its shape.
  4. Plate: Use a ring mold to shape the tartare on a plate, top with Ebiko, and sprinkle with toasted sesame seeds.

TIPS: Use high-quality sashimi-grade salmon, keep cold throughout preparation, and serve immediately after assembling.
