How to Deep Fried Oysters With Dipping Sauce
1. Ingredients
- 10 oz (300g) oysters meat.
- 2 slices ginger, 1 scallion, 1 tbsp Shaoxing wine (or dry sherry).
- 1/2 cup all-purpose flour, 1/4 cup cornstarch, 1/2 tsp baking powder, 1/2 tsp salt, 1/4 tsp white pepper.
- 1 large egg (beaten).
- Vegetable oil for deep frying.
2. Instructions
* Step 1: Prep & Blanch
Clean oysters in cold water and drain.
Bring a pot of water to a boil with ginger, scallion, and wine.
Flash-blanch oysters for 30 seconds. Drain and pat dry thoroughly with paper towels.
* Step 2: Coating
In a bowl, whisk together flour, cornstarch, baking powder, salt, and pepper.
Dip each oyster into the beaten egg, then dredge it in the flour mixture. Press gently so the flour sticks.
* Step 3: Frying
Heat oil to 350°F (175°C).
Fry oysters in batches for 2–3 minutes until golden brown and crispy.
Remove and drain on a wire rack or paper towels.
3. Serving Suggestion
- Serve immediately while hot.
- Dip: Pair with salt and pepper, sweet chili sauce, or a squeeze of fresh lemon.
