Oyster Steamed With Kelp

Ingredients
- Oysters (shucked) - 6 pieces
- Kelp (dried) - 15cm
- Alcohol - 5 tbsp
- Finely chopped green onion: Appropriate amount
- Ponzu soy sauce: Appropriate amount
Method
- Wash the oysters 2 or 3 times, changing the water each time.
- Add the sake and kelp to a frying pan and leave for about 5 minutes to rehydrate.
- Place the oysters on the kelp, cover and heat over medium heat. Once boiling, reduce heat to low and steam the oysters for about 3 minutes until they puff up.
- Place in a bowl, sprinkle with chopped green onions, and drizzle with ponzu sauce.
