Oyster Steamed With Kelp

Ingredients 

  • Oysters (shucked) - 6 pieces 
  • Kelp (dried) - 15cm
  • Alcohol - 5 tbsp
  • Finely chopped green onion: Appropriate amount
  • Ponzu soy sauce: Appropriate amount

Method

  1. Wash the oysters 2 or 3 times, changing the water each time.
  2. Add the sake and kelp to a frying pan and leave for about 5 minutes to rehydrate.
  3. Place the oysters on the kelp, cover and heat over medium heat. Once boiling, reduce heat to low and steam the oysters for about 3 minutes until they puff up.
  4. Place in a bowl, sprinkle with chopped green onions, and drizzle with ponzu sauce.
