INGREDIENTS:
• Shrimp – 200 g, cleaned
• Mushrooms – 100 g, sliced
• Chicken stock – 3 cups
• Coconut milk – 1 cup
• Thai red curry paste – 1 tablespoon
• Lemongrass – 2 stalks, bruised
• Kaffir lime leaves – 3–4, torn
• Galangal – 1 tablespoon, sliced
• Fish sauce – 2 tablespoons
• Lime juice – 2 tablespoons
• Sugar – 2 teaspoons
• Red chili – 1–2, sliced
• Cilantro – for garnish
DIRECTIONS:
1. Aromatics: In a pot, bring chicken stock to a gentle boil. Add lemongrass, kaffir lime leaves, and galangal. Simmer for 5 minutes to infuse.
2. Curry base: Stir in Thai red curry paste and cook for 1 minute until fragrant.
3. Creamy broth: Add coconut milk and mushrooms. Simmer for 3–4 minutes.
4. Protein: Add shrimp and cook until just pink and tender (2–3 minutes).
5. Season: Stir in fish sauce, sugar, and sliced red chili.
6. Finish: Turn off heat. Add lime juice and adjust seasoning to taste.
