Scallops Over Truffled Mushroom Risotto

Scallops have a sweet, delicate flavor and a cooling nature, making them ideal for pan-frying. Combined with a creamy truffle sauce, this dish offers a novel culinary experience, a creative twist on familiar ingredients.

  • RECIPE FOR 4 PEOPLE

  • PREPARATION TIME: 15 MINUTES

  • COOKING TIME: 30 MINUTES

  • CUISINE: NORTHERN ITALY

INGREDIENTS:

  • 1 jar of Truffle risotto
  • Butter or extra virgin olive oil
  • Chicken or vegetable stock
  • Salt and pepper
  • Seared scallops
  • Shaved parmesan (optional)
  • A few drops of Truffle oil (to finish) 

METHOD:

✅ Melt butter or extra virgin olive oil in a pan and add the contents of the jar.
✅ Mix gently to coat the rice grains and stir over medium heat gradually ladling in warm low salt chicken or vegetable stock (approx. 1.5 litres in total).
✅ Season with salt and pepper
✅ When the rice is nearly ready, sear some fresh prawns or scallops in a pan
✅ Serve risotto onto plate, top with seared prawns or scallops and a few shavings of parmesan
✅ To finish the dish with a final ‘WOW’, add just a couple of drops of Le Truffle oil right before serving!
