Thai Style Arctic Surf Clam With Papaya

Ingredients
- 100 g Arctic Surf Clams
- 150 g Papaya
- 30 g Onion
- 20 g Carrot
- 5 g Galangal
- 2 g Cilantro leaves, finely diced
- 20 g Cilantro stems
- 10 g Green pepper and cone pepper, finely diced
- 5 g Garlic, finely chopped
- 10 g Peanut, crushed
Seasoning
- 20 g Thai fish sauce
- 10 g Lemon juice
- 5 g Sugar
- 8 g Thai sweet chili sauce
Method
- Slice the Arctic Surf Clams in half.
- Cut the papaya, onion, carrot and galangal into small pieces.
- Mix the galangal, finely diced cilantro leaves, cilantro stems, finely diced green pepper and cone pepper, and finely chopped garlic with all seasonings to make the sauce.
- Stir the sliced Arctic Surf Clams and mix.
- Top with crushed peanuts and serve.
